BHUBANESWAR: In a first, Odia cuisines were prepared in a contemporary twist at a pop-up outlet ‘Kichi Nua Kichi Puruna’ here Sunday. Organised at Biju Patnaik College of Hotel Management, Tourism and Social work near Rasulgarh, it witnessed a good amount of food lovers.
National Cookery show winner Abinash Nayak and Amol Mohanty cooked and promoted Odia cuisines with a contemporary twist. The pop up had a three course meal like Foamy Pakhala served in a spoon with Badi chura, Dalma Rattatouile served with Kanika, Malpua with banana cake and Motichoor pudding.
Interacting with Orissa Post, Chef Nayak said, “It’s an effort to make everyone understand the value of our traditional food. Odia cuisine has some rich recipes which shouldn’t be forgotten and such dishes can be represented in the International menu by adding a contemporary twist to it.”
It was not only inspirational for the chefs but also for the food Findo groups who had an amazing time at the Pop up that showcased master touch of culinary by these two budding chefs. Rohit Srivastav of Food Findo feels that every cuisine has its dynamic appeal and it should be our effort to reconstruct it for a novel representation.
Food blogger Alka Jena, Famous chef Michale, Abinash Patnaik, Rachuyat, Pranita Panda and Ashwas Priyadarshan were present at the event. Many students of the Biju Patnaik College of hotel management were also present. Blogger Alka Jena was very pleased with the efforts to give new life to Odia cuisines and so was Chef Michale who is quite well-known in the food industry for his signature dishes.
