Since decades rice is cooked in hot water but nowadays West Bengal is producing rice which can be cooked in cold water.
According to the farmers, “Soak the grain in cold water for about 30 minutes and it is ready to consume”.
However, it must not be forgotten that since this ‘instant’ rice needs water to cook on its own, availability of safe drinking water is only requirement in household, they added.
This rice was initially produced by the Assamese farmers which can blend with curd/cream, jaggery and banana powder to create a breakfast. It is easily digestible, stays light in stomach, and doesn’t have a distinctive flavour of its own.
Termed as Soft rice, it may be the future as it is cheap, easily cooked and no harmful smoke is produced.
